What Is Actually In Your Sweetener
You are standing in the aisle holding two packets that claim to be the same thing.
Both say stevia on the front. One costs two pounds and one costs six, and there is no obvious reason for the difference. Behind you there are four more shelves of this, all promising the same outcome in slightly different fonts. You have about ninety seconds before this stops being worth the effort.
This page is a buyer’s guide, not a league table. There is no winner at the bottom, because which one is right depends on the job you want it to do. What there is, is a way to tell what you are actually holding.
1. Turn the packet over
This is the entire skill, and it takes five seconds.
The word on the front is often not the first ingredient. Products sold as stevia or monk fruit are very commonly blends, and the thing on the label can be a small fraction of what is in the bag. The bulk is usually something else entirely.
Ingredients are listed in order of quantity. So read the first one. If the first ingredient is not the thing on the front of the packet, you now know what you are buying, and you can decide whether you mind.
Often you will not mind. Sometimes you will, particularly at six pounds.
Nothing about this is a scandal, by the way. Blending is normal, and the label is doing what labels do, which is put the appealing word in the largest type.
2. Why a packet can be mostly something else and still taste right
There is a good reason blends exist, and it is not only cost.
Pure stevia and pure monk fruit are somewhere between 150 and 400 times sweeter than sugar. The amount you would actually need for a cup of tea is far too small to measure, and it would vanish in the bottom of a spoon.
So manufacturers bulk them out with something that behaves more like sugar in the hand. That makes the product usable. It also means the product can be almost entirely the bulking agent and still taste sweet enough, which is where the confusion comes from.
The pure versions do exist and they are single-ingredient. Liquid extract drops tend to be the cleanest form, and a bottle lasts a very long time.
They are also harder to bake with, for the same reason they are pure. Two drops cannot do the job of a hundred grams of anything. That is the trade, and section five is about living with it.
3. What each one does
Plainly, and without ranking them.
Pure stevia and pure monk fruit. Neither raises blood sugar. Both sit at a glycaemic index of zero. Both are intensely sweet, so you need very little, and both carry a taste some people notice and others do not. Nothing settles that except trying them, and the disagreement is real rather than a matter of getting used to it. Some people taste something bitter at the back, and some taste nothing at all.
Sugar alcohols. This is the group with the names ending in -ol, and they are not all the same. Some are effectively zero. At least one common one sits around a glycaemic index of 7 to 13. That is low next to table sugar at about 65. Low is not the same as zero, and the packet will not make that distinction for you. Worth knowing if that one is the first ingredient in the packet you are holding, which is exactly the case section one was about.
Most of these also cause wind in quantity. That is the trade-off with the whole group, and it is dose-related rather than mysterious.
Allulose. This behaves like sugar in a way none of the others do. It browns, it caramelises, and it holds moisture, which is why cakes made with it are not disappointing. It gets absorbed and then passed through largely unchanged, so it carries almost no calories.
There is one more thing about allulose worth having, and it is a genuinely interesting one.
4. The allulose detail
Taken alongside a meal with carbohydrate in it, allulose appears to slow how fast that meal’s glucose arrives.
The mechanism is that it interferes with some of the enzymes that break carbohydrate down. Slower breakdown means a more gradual arrival rather than a fast one.
That puts it in the same family as everything else on this site. Soluble fibre gels and slows the meal. Protein first slows the meal. Walking afterwards pulls glucose out. Slow the arrival is the single idea underneath nearly all of it, and this is another route to the same place.
Two honest caveats.
Above roughly 15 to 20 grams at once, allulose commonly causes gas and bloating. That is a real amount in a batch of baking, and it is why most first attempts with it go badly. Start with half of what a recipe says.
Small amounts across several products add up. Gum, a bar, a drink, something you baked. The per-serving figure on each packet is not the figure for your day.
5. Which one for which job
Two jobs, two answers, and one cupboard.
Everyday sweetening. Tea, coffee, yoghurt, porridge. Stevia or monk fruit drops. You need almost none, there is nothing to bake, and the cleanest form is the easiest to buy.
Baking. Allulose, where sugar’s actual behaviour is needed. Browning, caramelising and moisture are not optional in a cake, and the intense sweeteners cannot do any of them.
If a recipe has gone wrong on you before, this is usually why. A cake made with drops is pale, dry and sad, and none of that was your fault.
That is two products. You do not need the shelf. And you certainly do not need the third one you bought in a hurry, which is still at the back of the cupboard with two spoonfuls gone.
6. What this does not mean
None of this makes a sweetened thing into a health food.
A biscuit made with allulose is still a biscuit, and it is fine to eat a biscuit. The point is smaller. If you are going to have something sweet, know which packet is which. And do not pay six pounds for a bag that is mostly filler.
The larger habit here matters more than the sweetener. Reading the back of a packet pays out on everything else in your trolley. It is also a question about a product rather than a question about you, which is a much easier place to spend your attention.
Start with one
Go and read the first ingredient on the sweetener you already own.
That is it. Tonight, in the cupboard, thirty seconds. You will either find the thing on the front, or you will find out what you have actually been buying.
If you decide to change anything after that, change one thing. Buy the drops for the tea and leave the baking alone, or buy the allulose for the baking and leave the tea alone. Not both in the same week.
